Key Responsibilities:

Cost Control & Analysis:

  • Monitor all food and beverage cost-related activities and identify areas for improvement.
     
  •  Implement cost control systems to ensure profitability in F&B operations.
     
  •  Review and analyze food and beverage costs daily and prepare relevant reports.
     
  • Ensure accurate recording of all purchases, requisitions, and transfers.
     
  • Regularly compare actual costs with budgeted costs and investigate discrepancies.
     
  • Conduct regular physical inventories of food, beverage, and operational supplies.
     
  •  Ensure proper documentation of stock movement, including receipts, transfers, and wastage.
     
  •  Maintain accurate inventory records and reconciled them with purchase records.
     
  • Monitor storage conditions and shelf life to minimize spoilage and waste.
     
  • Work with the F&B team to establish menu pricing based on cost analysis.
     
  • Conduct menu engineering analysis to identify high-margin and low-margin items.
     
  •  Provide recommendations to enhance profitability through menu adjustments.
     
  •  Monitor purchasing procedures to ensure cost-effective sourcing.
     
  •  Collaborate with the procurement team to negotiate prices with suppliers.
     
  • Review supplier performance and recommend improvements where necessary.
     
  • Prepare cost reports for management, highlighting key findings and recommendations.
     
  • Assist in the preparation of annual budgets and forecasts for F&B operations.
     
  •  Monitor and report on the profitability of banquet and catering functions.
     
  • Develop and enforce policies and procedures to maintain cost control.
     
  •  Ensure compliance with company standards, health regulations, and financial protocols.
     
  •  Train relevant staff on cost control procedures and best practices

Qualifications & Requirements:

  • Bachelor’s degree in Finance, Accounting, Hospitality Management, or a related field.
     
  • Proven experience in cost control, or FB Control preferably in a resort or hotel environment.
     
  • Strong knowledge of F&B operations, inventory management, and procurement processes.
     
  •  Analytical skills with attention to detail.
     
  •  Excellent communication and interpersonal skills
